February 2006..... The focus is on Florida, and we start with Ybor City Florida. We went there initally to find the beer and found out that they don't make Ybor City Beer in Ybor City anymore... | But we found a Great Cuban Resturant |  | Our good friend Rick Moock from the 97th Regimental String Band came with us on this eating extravaganza...  The best shrimp around, Just how I like 'em still floppin' around...Nice and Fresh!  
Aha Jim Shrimp Brochette! | Jim’s Shrimp Brochette (AKA Shrimp on a stick) Ingredients Get 24 nice fat fresh shrimp- (not medium not large not even jumbo- but colossal) Sherry Garlic Ginger Lemon Soy sauce Sesame oil Arrowroot Soak 8 bamboo skewers in wine bottle (drink the wine first) the fill with water Shrimp Broth Remove heads, shells and de-vein the shrimp. Rinse heads and shells a pot and just cover with water, add a splash of sherry and simmer for 20 minutes Allow to cool strain through fine sieve pressing as much broth as possible out of shells Marinade: In large plastic zip lock bag combine, mixing thoroughly: 2 clove garlic finely minced 1 heaping Tablespoon grated ginger 1 teaspoon lemon zest 1 ½ tablespoon lemon juice 1/3 cup soy sauce 1 Tablespoon sesame oil Add 1/3 cup of the shrimp broth Add shrimp to marinade, turn several times to coat . Refrigerate for 30 minutes to 1 hour, turning and mixing occasionally Prepare charcoal grill Remove Shrimp from marinade and thread 6 shrimp on to 2 parallel skewers (2 skewers make turning the shrimp easier). Prepare 4 of these kabobs. Dipping sauce: While coals are starting, reduce 1 ½ cups broth over medium heat to about ¾ cup. Add marinate to reduce broth, cook stirring and thicken with arrowroot. Baste the shrimp kabobs with dipping sauce and grill over medium heat for 2 ½ minutes. Baste and turn and continue cooking about 2 minutes till done. - DO NOT OVERCOOK! Serve over a bed of saffron rice and top with dipping sauce. Fresh steamed broccoli or asparagus works well as a side dish.
